Easy Chicken Tarragon Salad
1-2 cooked chicken breasts, diced
2-3 stalks celery, diced
handful of dried cranberries (craisins) optional
1/4 cup mayonnaise
1/4 cup sour cream
salt and pepper to taste
1 teaspoon tarragon, or to taste
Mix all together. Chill. Serve on bed of lettuce or on slices of whole wheat or 7 grain bread.
I think the secret these days to any good potato or chicken salad is the 50-50 ratio of mayonnaise to sour cream. I feel that it tastes much better this way. This is easy, and just plain good!
Nancy
love anything with chicken
ReplyDeleteme too! I could have chicken almost every day of the week.
DeleteAunt Nancy, exactly what is tarragon?
ReplyDeletereply below, figuring this thing out, LOL! Hard to find fresh, but I love the dried anyway. A little goes a long way.....
DeleteA leafy herb with a very distinct taste, not too different from fennel (very mild licorice?) hard to describe but really good in french cooking, great on most chicken dishes......
